Eating Gluten Free

One question get from people
when I tell them I'm gluten free
is 'what is left to eat?'
Well, not much.

No, I'm totally kidding. 
There is actually quite a bit of food.
You just have to check every label for ingredients.
And accept early on 
that everyone observing you 
will assume you are on some insane calorie counting mission,
because reading the label that closely,
looks a lot like checking calories and fat content.

So now that we've all accepted that,
here's what's been on our menu!

This week we've been all about salads.
(I finally found a gluten-free ranch dressing!!)

{red leaf lettuce, orange bell pepper, tomato, carrots, and warmed goat cheese salad}


A lot of ranches have wheat in them.
Why they would need to have wheat?
I have no idea.
The food industry seems to like to throw it into everything.
Just for good measure.
And salad dressings are dangerous territory
for the gluten-intolerant.

I've been looking for a gluten free ranch for ages now.
Ranch is one of my favorite dressings,
and when I flipped this over and saw the 'gluten-free' label
I almost did a happy dance in the aisle at Fred Meyer.

You can tell I've really been enjoying it
since half the bottle is gone.
I will not admit to when we bought this.
Don't even ask.

  1. Well your meal looks delicious and it seems you have a much better lifestyle being gluten free. My husband and I are about to attempt (again) to cut out bread and processed sugar from our diet to get a little healthier.

  2. There are SO many gluten free options now, but I seriously cannot imagine being gluten free ten years ago. That salad also looks to die for.

  4. Ahh! I'm gluten free too, and yes - they've definitely come a long way in what's available :)

    There's actually a brand of salad dressings I'm in love with - Walden Farms - I know they have it at Target. At least ours anyways: Gluten, Calorie, Carb, Sugar, and pretty much anything else you can think of FREE. No idea how it's possible but I love them all :)
